Judy’s Yummy Vegan Cookies. You’d never guess they’re vegan!

Wet ingredients:

½ cup canola, grape or olive oil

¾ cup sugar

¼ cup brown sugar

¼ cup almond, rice, soy or hemp milk

1 ½ teaspoons pure vanilla extract

2 tablespoons maple syrup

Dry ingredients:

1 cup all-purpose flour

2/3 cup whole wheat flour

¼ cup cornstarch 1teaspoon baking powder

½ teaspoon ground cinnamon

¼ teaspoon salt

Nuts and fruit:

1 cup chopped walnuts

1 cup dried fruit such as raisins, berries, etc.

Directions:

1. Place all the wet ingredients into the large bowl and beat well.

2. Sift all the dry ingredients together into a separate bowl. Then add about 1/3 of the dry mixture at a time to the wet ingredients and mix to incorporate them.  Add the fruit and nuts toward the end when the dough is still a bit floury and finish mixing all into a stiff dough.  If it is too dry, add a few drops of soymilk, or if too wet, add a sprinkle of flour.

3. Cover the dough and set it in the refrigerator for an hour or two.

4. Preheat the oven while you complete the cookies:

5. Divide the dough into equal quarters and shape each quarter into a role. Slice each roll into 6 equal size pieces.  Round up each piece and place on a cookie sheet spacing about 1” or more apart.

6. Bake about 14-15 minutes until the bottoms are light brown.  Remove the cookies from the oven and let them rest a few minutes.  Then carefully remove the cookies to a drying rack and let cool before storing.  The recipe can be doubled to make about 4 dozen cookies.
