Are you trying to eat lower on the food chain?  Of course you turned to cheese…until you discovered cheese is almost as high as beef for carbon emissions!  Now what? Who doesn’t love the creamy texture and snappy taste of cheese.

Try this delicious vegan “cheese” option and see if it satisfies your desire in a most filling way!  It’s easy, too.

Begin with soaked cashews.

Ingredients:

1 ½ raw Cashews, soaked 2-3 hours

¾ teas. Sea salt

2 teas. Nutritional yeast

4 teas. Fresh lemon juice

1 clove Garlic

1 teas. Fresh parsley

½ teas. Dried dill

Thoroughly drain the cashews and put in a food processor.  Process briefly to chop in smaller pieces. Either put the garlic through a garlic press or chop finely and add to the food processor with the rest of the ingredients.  Blend until all ingredients are well incorporated.

The spread may be put in a small container or shaped into a ball and rolled in a bit of paprika and/or chopped almonds.  Keep refrigerated until served.  Serve with vegan crackers or veggies (carrot, celery, etc. sticks).
